Parker’s Table will serve as the resort’s signature restaurant, offering a celebration of Canada’s true North through seasonal, ingredient-driven cuisine. Named for Elizabeth Parker, a founding member of the Alpine Club of Canada, the space will carry a warm, refined atmosphere that brings a sense of occasion to every meal. The menu will be grounded in partnerships with local farmers, fishers and foragers, complemented by a globally inspired wine cellar that will build on the legacy of Eden, the resort’s former Five-Diamond restaurant, and a cocktail program rooted in Canadian botanicals and spirits. Guests will be able to enjoy signature experiences including a tableside butter cart, arriving with warm breads and a rotating selection of artisanal butters.
The beating heart of the hotel, Rimrock Social, will serve as an elevated gathering space framed by panoramic mountain views, where guests can transition from a day of exploring Banff into an evening centered around spirited conversation, craft cocktails and playful, plant-forward bites. From the afternoon Art of Coffee ritual featuring the Pine Needle Travel Cake by Chef Yun Eunyoung to lively evenings filled with music, globally inspired flavors and a sophisticated social energy, the space will foster connection throughout the day and into the night.
Tucked away within the resort, The Listening Room will offer a discreet, immersive escape defined by rare spirits, fine wines and indulgent bites, set against the warmth of vinyl. A curated collection of whiskey, cognac, and scotch will anchor the experience, complemented by thoughtful rituals from tableside service to aged cocktail barrels. Appointed with high-fidelity sound and warm acoustics, the space will blend curated vinyl sets and rotating DJ residencies, with moments where guests are invited to select records and shape the energy of the evening.
Designed as the place to prepare for mountain days, refuel between adventures and embrace laid-back après culture, Rimrock Market will serve as the resort’s mountain-side coffee bar and biergarten. Open throughout the day and offering craft coffee, casual fare, chef-prepared picnic supplies and an easygoing atmosphere, the Market’s outdoor terrace, complete with firepits and relaxed seating, will become the ideal gathering place to unwind after time spent on the trails or slopes.
