PASTRY AS POETRY

When Chef Eunyoung Yun, one of the most influential voices in contemporary pastry, arrived at Rimrock Banff in spring, she set out to unearth ingredients for the next iteration of the Emblems Collection Travel Cake.

“I was struck by the majestic and peaceful nature,” she reflects on Banff National Park. “I wanted to convey that feeling through flavour and texture.”

Chef Yun’s visit was well timed: fresh snow blanketed the alpine, and yet, signs of spring were all around: songbirds returning to a familiar perch, buds on tree, and a sense that renewal was near, both for the season and our own new beginning, as Rimrock Banff.

“I was inspired by pine trees, which are so iconic and easily found in Banff,” Chef Yun explains. “The fresh, crisp aroma of pine needles pairs beautifully with the pure sweetness of honey.”

Chef Yum gave a lot of thought to how these two ingredients might play together to tell the story of this special place. In her interpretation, alpine honey, with its clean sweetness, became the anchor, and the aromatic pine needles, its counterpoint. These ingredients, carefully composed, begin to describe a place more accurately than words.
